Stir Fried Rice With Pineapple and Chicken


Ingredients:
2 bowls cooked rice
150g chicken
2 slice canned pineapples (diced)
2 egg (beaten)
2 cloves shallot(sliced)
Marinade:
1/2 tbsp light soy sauce
pepper
1/2 tbsp cornflour
1/2 tbsp oil (to be added last)
Seasoning:
3 tbsps Pineapple syrup
3 tbsps ketcup
1/2 tbsp salt
Method:
-Wash chicken and dice. Mix with marinade.
-Heat wok and add 2 tbsps of oil. Put in shallots and stir fry until fragrant. Add chicken and stir fry until done. Put in cooked rice and stir fry until done. Put in cooked rice and stir fry until hot. Add beaten eggs and stir fry until eggs are set. Pour in seasoning and pineapple and stir fry for a while. Serve.
p/s: Use rice cooked the previous day so that is not too soft.
